Ingredients:
2 Tbl butter
1 lb parsnips, peeled, diced
1 lb apples, peeled, cored, diced
1 onion, diced
2 tsp curry powder
1 tsp dry thyme
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp cardamom seeds		 ˝ tsp ground cinnamon
2-3 garlic cloves crushed
3 cups chicken stock
2 cups apple juice
1/2 cup heavy cream
salt and pepper to taste
chopped chives or parsley for garnish
Cooking Instructions:
In a soup pot, heat the butter, and when foaming, add the parsnips, apples, and onions. Sauté on medium for five minutes, but don’t brown.

Add curry powder, spices and garlic and cook for about 2 minutes, stirring well.

Add stock and apple juice, stirring until well mixed. Cover and simmer 20-30 minutes, until the parsnips are very soft. Puree in a food processor or with a stick blender, and if too thick, dilute with a little stock or water. Return to the pot, add the cream and reheat, but do not let boil. Taste and season as necessary.
Serving Suggestions:
Serve garnished with chopped chives or parsley Serve with warm crusty bread.
