Ingredients:
2 Tbl butter
1 onion, finely chopped
2-3 cloves garlic, minced
1/2 cup heavy cream
1/2 cup sour cream
1/2 cup parmesan, grated
2 tsp finely grated lemon zest
1 tsp Dijon mustard
4 oz baby spinach
1/4 cup parsley, roughly chopped
2 Tbl fresh dill. chopped
salt and pepper to taste
12 oz prawns, peeled and chopped
8 oz haddock fillets, cut into 1 inch cubes
4 eggs, boiled and peeled, sliced
1 sheet puff pastry
1 egg, lightly beaten
Cooking Instructions:
Preheat oven to 350˚F.Lightly butter an 8 x 8 dish.

Heat butter in a medium saucepan; add onion and cook for 5 minutes until softened. Add garlic and sauté another minute. Stir in cream and sour cream; bring to a simmer and remove from heat. Stir in parmesan, lemon zest, mustard, spinach, parsley and dill. Season to taste with salt and pepper.

Place fish, prawns and eggs in the baking dish; pour cream sauce over all.

Roll out puff pastry and cover the pie, cutting vent holes in top to allow steam to escape. Brush pastry with egg and bake for 40 minutes, until pastry is well browned.
