Ingredients:
4 Tbl of pearl barley
3/4 cup apple juice
1/2 cup water
4 tart apples, peeled, cored and sliced
1/3 cup sugar
1 Tbl lemon juice
1 tsp vanilla
1/2 cup heavy cream
grated nutmeg for garnish
Cooking Instructions:
Bring barley, apple juice and water to a boil; cover; then simmer for 20 minutes. Add apples; cover again and cook until both are softened. Remove from heat; stir in sugar, lemon juice and vanilla. Blend the mixture in a food processor until creamy.

Pour into serving dishes and chill.
Serving Suggestions:
Serve, garnished with heavy cream or whipped cream and grated nutmeg.
