Now, there's a broad topic for you... "Healthy Cooking & Nutrition". They do go hand in hand, however, as you'll see...
The first part can mean many things to many people. For instance...
Healthy cooking can mean low-fat cooking, and it generally always does entail cutting back somewhat on fats and oils, at least in part. However, there is so much more to cooking healthy meals than simply reducing the amount of fat you use. It can, for instance, mean using proper amounts of the right kinds of fats in your diet as well.
Some folks look at healthy cooking as consisting solely of salads and veggie stir-fries, and again... they're not entirely wrong. The fact remains that cooking and eating healthy can (and usually does) include "reasonable" amounts of "quality" fish and meat protein, along with a substantial proportion of fruit & vegetables to round it out.
Sidebar: Now wait a minute... before you, as a vegetarian start throwing things at your monitor, I didn't say it had to include meat protein... just that it usually does. Personally, I eat vegetarian meals "at least" half the time (usually more)... so I'm on your side. everyone is entitled to their own *opinion, right?

That is where the second part of our title comes in... "Nutrition".
In order to learn how to cook healthy you also need to learn a great deal about nutrition. Webster's dictionary defines nutrition as... and I quote:
1. the act or process of nourishing or being nourished
2. anything that nourishes; food
3. the study of diet and health
We need to look at healthy cooking (the art of combining foods to be delicious) and nutrition (the science of food in relation to your body) at the same time, since, in my opinion*, they are synergistic (e.g. work together). You simply can't do the first without an education in the other. My mission here is to combine both in an easily understood, and delicious melting pot of healthy cooking info and nutritional know-how.
