Hi there, how are you this week? I hope you're picking up
lots of great tips hanging out with me here in the kitchen.

The sun is shining here in beautiful Nova Scotia, and the
smell of spring is in the air. It's soon time to break out the
old trout rod and fight the black flies to get to the brook :-)
Things are really getting busy here on the home front. What
with cooking classes, chef demos, catering jobs, planning
upcoming functions, recipe and menu design, and running
the website... it's a very full life, indeed. As a result, I am
going to have to cut back on the frequency of this ezine. It
will be published every two weeks from now on, or until
further notice. My apologies to those addicted to receiving
it weekly. Maybe I'll start a support group :-)
By popular demand, I'm going to dwell a bit on the healthier
side of food this week. I've put together an article entitled,
"10 Great Tips for a Healthy, Low-Fat Diet" just to get you
motivated a bit.
Our recipe of the week is one I use all the time... my
"Soy-Banana-Yogurt Smoothie". It's easy and it's awesome!

10 Great Tips for a Healthy, Low-Fat Diet

In this day and age, people are searching and yearning
for a healthier lifestyle.
The glory days of high-fat sauces that make the heart
nearly seize up at the thought, are being replaced with
low-fat, lighter versions by some of today's top chefs.
Burgers and fries are giving way to wraps, rolls and
health conscious fast food. Even the ballpark, home to
the hot dog, has been inundated by modern, lighter,
fusion cuisines.
Obviously, since these trends have indicated to the
"movers and shakers" of the industry to totally change
the way they design their menus, the majority of us are
interested in lowering our fat intake and living healthier.
In keeping with this movement, here are 10 great tips to
help you work toward your goals. These will not only help
you to cook more healthy meals for you and your family,
but assist you in maintaining a proper weight and just
plain "feel great"
1. Use low-fat methods instead of frying. Grilling,
broiling, poaching, roasting, etc. are excellent ways to
prepare food without adding unnecessary oils or fats.
2. Marinate meat, fish, chicken..... almost anything,
including tofu, before cooking. This locks in flavors and
gives you a base to work on when you create your dish.
Use your imagination.... the sky's the limit!
3. Use herbs, spices and additional flavorings to make up
for removing fat. Since fat makes everything taste good
(hence the reason we're hooked on it), compensating with
things like basil, chillies, garlic, ginger, etc... will enhance
the flavor of the dish so you won't miss it.
4. Season in layers. Adding a pinch of salt when you add
each set of ingredients will build flavor, like a foundation.
It will require far less salt as an end result.
5. Reduce or cut out the fat in your recipes by adding other
liquids. Milk, soy milk, wine, stock, juices, etc. may be
used as a replacement for the quantity removed, depending
on the recipe.
6. Instead of reaching for the salt to finish seasoning, try a
bit of lemon juice or maybe your favorite variety of vinegar.
Most of the time, an acid will accent without any added salt.
7. Use non-stick sprays instead of oil for sauteeing or frying.
There are also pumps available that allow you to use the oil
of your choice, and save you even more money on the
canned spray variety.
8. In order to maximize the flavor of stocks, reduce them to
half of their original volume. You will be amazed at the
flavor. Remember to season after it finishes reducing, as it
will become very concentrated!
9. Look at soy products like tofu (yes, tofu) as a meat
alternative. Soy is an excellent source of protein, calcium,
vitamins and minerals and is low in fat. Studies are also
proving great benefits for menopausal symptoms and
chronic illnesses.
10. Check out various, healthy, Old World cuisines. The
Asian and Mediterranean styles of eating have long been
known to be the most healthy diets anywhere in the world.
And the possibilities....endless....
A bonus tip for you...
DO THIS DAILY.....drink 4-5 glasses of water (not juice,
not pop, water!) This may seem trivial, but our bodies are
75% water and it is essential for our maximum health.
Not only that, but drinking 8 glasses of ice water a day
burns 200 calories just by your body having to warm it up
to 98 degrees! How bad is that?!!

way to a low-fat healthy diet.

Here's a great smoothie recipe that I use to start my day
on a regular basis:
Makes 3 - 4 glasses:
Ingredients:
2 bananas
1/4 cup wheat germ (or flax seed)
2 tbsp. honey
1 ½ cups soy milk
½ cup low-fat flavored yogurt
½ tsp. vanilla extract
Method:
Cut up bananas, and put in a blender.
Add the rest of the ingredients and puree well.
Taste, adjust consistency with soy milk, and enjoy.
Play with different flavors of yogurt, flavored soy milk, etc.

"How To Cut Your Cooking Oil in Half!"
Here's something that always amazes the students at my
cooking classes...
When you're going to use cooking oil to saute, don't put it
in before you heat up your pan. A hot pan uses much less
oil to cover the surface, usually as little as half!
Hot oil spreads faster and farther, since the viscosity (fancy
word for thickness) is greatly reduced.
Do yourself a favor, and try this one next time you saute...
You'll be pleasantly surprised :-)
